Showcasing premium aged, free-range, grass-fed Tasmanian beef with all the trimmings

An ode to the humble steak and the incredible beef produced here in Tasmania, Black Cow Bistro is brought to you by the Stillwater Team. From Robbins Island Wagyu to Cape Grim Beef (sourced from around Tasmania), each cut has been expertly selected by chef and co-owner Craig Will and paired with a covetable selection of side dishes that change according to the best seasonally available produce. The substantial vegetable sides (think Dijon cream and chive potato galette or roasted Yorktown Organic baby carrots with roasted garlic, fennel and herb sauce) can be enjoyed by non-meat-eaters as a meal in their own right with a range of seafood options also available. The award-winning wine list has been curated by sommelier and co-owner James Welsh and Craig Will’s famous frozen caramel slice (by popular demand) is a permanent fixture on the dessert menu.
